Belgian Waffles 

Rodney and I were given a Belgian waffle maker for a wedding gift (Thank you, Jaymie and Janet).  It is amazing and I could eat waffles almost everyday!

Here is a great recipe.

Ingredients:

  • 2 cups flour

  • 3/4 cup sugar

  • 3 1/2 teaspoons baking powder

  • 2 eggs separated

  • 1 1/2 cups milk

  • 1 cup butter, melted

  • 1 teaspoon vanilla extract

 

Directions:

  1. Combine flour, sugar and baking powder in a bowl.  

  2. Separate eggs and place yolks in a separate bowl.  

  3. Lightly beat the egg yolks.

  4. Add milk to the beaten egg yolks.  

  5. Add the butter

  6. Add vanilla.  

  7. Mix until well combined.  

  8. Pour wet mixture into dry ingredients until combined.

  9. Beat egg whites until stiff peaks form.

  10. Fold egg whites into batter.  

  11. Preheat waffle maker. Once it’s ready, spray with cooking spray to make sure the waffles do not stick.

  12. Pour approximately 1/3 cup batter in waffle maker. Close lid and cook until golden brown.

  13. Top with maple syrup and butter.

You can also top with fresh strawberries, blueberries or even raspberries. This brings a nice additional sweet flavor to the waffle. Hope you enjoy!
